so ... the harvest is wrapping up!
What a delightful time of year!!
We are deep into our beautiful Wisconsin winter now and SO blest by the abundance God's blest us with. We buy almost NO groceries.
We've been doing "bread bar" with our fresh ground grains baked into warm beautiful loaves, using our pickled relishes, pickles, beets, eggplant "caviar", caponata, okra pickle, corn relish, sauerkraut...some grated Wisconsin cheeses, etc…our guests and grandkids LOVE IT~
We're so enjoying our Jersey beef…amazing meats…we even canned meat this year…corned beef and venison. yummy!

The eggplant is abundant. We've got Eggplant Parmesan coming out of our ears! we grew the typical big globe ones. YUM! and grilled with olive oil and garlic! Oh my goodness! better than steak! we also love it in Panko and topped w the roasted tomatoes and Shredded parmesan
Okra is our favorite. Okra dill pickles and we especially love it grilled w a bit of GOOD olive oil and salt..
our wonderful sweet corn was OFF THE BRIX chart...(as was everything else!) but the corn was SO wonderful this year!! we had WAY too much...and still enjoying it fresh!
Last night we grilled a butternut squash over wood. All I did was wrapped it loosely in foil, grilled it slow over wood and YUM!
We're eating a lot of Thai...oohhh so good with fresh garden veggies and cilantro and our abundant THAI basil! see recipe in "Eat With Joy"
The favorite thing we did this year is MORE roasted tomatoes…a dab of olive oil and salt and roasted in the oven with onions and garlic…then I canned it. It's delicious to eat right out of the jar or use in recipes…I also roasted my shishito peppers and Giant marconi's like that…oh my goodness is that wonderful on fresh ground, fresh baked bread with a drizzle of olive oil...
We're SO blest with the super-abundance of this year's crops. (we're weary and ready for winter. it was a BIG summer and the abundance of the produce is overwhelming.) now we start with butchering our wonderful Jersey steers. I'll be making corned beef in a couple weeks!!
